Portable and satisfying, summer rolls are the ultimate picnic meal on a hot summer day, especially with a refreshing bubble tea to slurp along with them. Registration is required.

Summer Rolls also make for a well-balanced light lunch or an impressive appetizer at your garden shindig. Learn how to make all sorts of summer rolls and bubble tea drinks in this 90-minute class. You’ll even prep ahead the components for your next picnic or tomorrow’s lunch.

We’re filling our summer rolls with all of the fresh summer herbs, like basil, mint and cilantro as well as leafy salad greens, cucumbers and peppers. Use what you have and make them your own. Add your protein of choice. Chef Laura will demonstrate shrimp as well as tofu and smoked meats. Get scrappy with leftover chicken breast or prosciutto from the deli. Make a subtly spicy and nutty dipping sauce. Learn two methods to boba drinks — one with a traditional tea and milk base and the other, a kid-friendly fruit based drink, made from scratch with no additional sugar. And of course, we will fill you up with fun facts as well, such as why Thai tea is orange and where Boba comes from.

In this class, you will make:

  • Vietnamese Summer Rolls
  • No Heat Peanut Dipping Sauce
  • Thai Iced Tea with Boba
  • Fresh Watermelon Boba Smoothie

All recipes are gluten free and can be made vegan.

Although it is virtual, this class is hands on and paced for you to follow along. If you plan to follow along with us, you will need to secure your own ingredients and do a small amount of prep. See HERE for ingredient list and class preparation steps.

The recipes will be emailed to those who register one week ahead of time.

Laura Scheck is a graduate of the Natural Gourmet Institute in NYC and the founder of Teaching Table, a culinary education platform that inspires home cooks of all ages to cook with what they have. Laura has always had a passion for food, where it comes from and how to make it, but became most invested in plant-based foods when she started her neighborhood CSA (Community Supported Agriculture) with neighbors and developed a relationship with her farmers. Laura previously worked as a teacher and coach for educators, making her uniquely suited to share her passion for food in an educational way. She has taught at Natural Gourmet Institute, Mount Sinai Institute for Advanced Medicine, Brooklyn Brainery, Bronxville Adult School, and Cookspace.
