Ingredients:

• 2 cups all-purpose flour
• ½ cup white sugar
• 3 teaspoons baking powder
• ½ teaspoon salt
• ¾ cup orange juice (ready made or fresh squeezed)
• ⅓ cup vegetable oil
• 1 egg
• 1 tablespoon orange zest (the outer peel of the orange-optional)

Other items needed:

• Muffin tin for 12 muffins
• Paper or foil baking cup liners
• Shortening (to grease the bottom of the muffin tin if you don't have baking cup liners)
• Preheat oven to 400 degrees Fahrenheit
